The grilled cheese sandwich has been a staple in the American diet all the way back to the 1920's. Another interesting fact is that originally the sandwich was open faced but when sliced bread became more available in the 1960's a top slice of bread became the norm. Since then the grilled cheese sandwich has evolved immensely. Just about every restaurant offers it on their menu in one form or another from plain to fancy. It's pretty amazing how creative you can get with some bread and a few slices of cheese.
